Smoked Walleye

**Recipe by local LOW Guide

Ingredients

  • about 1/2 canning salt and 1/2 brown sugar,
  • any herbs and spices you want. put thin layer of salt mix on bottom of tray, tub, dish etc. put large skin on fillets skin side down on salt, sprinkle a good layer of salt on top so it’s covered but not caked on. refrigerate 15-20 hours, rinse salt off and smoke with fairly low heat until done, about 4-8 hrs depending on smoker, weather, etc. cool and eat with beer
