The waters at Lake of the Woods are known for its many species of fresh fish. Jumbo Perch are being caught quite frequently and they have a delicate taste as do the walleye. This recipe is quite easy so give it a try.
Ingredients:
2 eggs
½ cup milk
1 pound fresh perch fillets
1-2 cups flour
Add spices to taste such as: garlic, lemon pepper, salt, paprika, tarragon, oregano
Adding Baking Powder to the mixture gives a crispy finish.
Vegetable oil
Directions:
Prepare a shallow pan with oil over medium heat on the stovetop.
Whip the eggs and milk together
Dip the perch fillets one at a time in the egg mixture
Dip in the flour mixture
Place in the pan.
When golden brown (about 5 minutes) flip the perch fillet and cook another
5 minutes. The perch fillets should be flaky and the meat white.
           Serve your perch with sides of fried potatoes and beans, your favorite
           Salad and a dinner roll. Enjoy!!!
